Eating better: make your side dish your main dish

A very simple trick to eating better is turning the tables on the traditional way we serve meals. It transforms vegetable side dishes into your main course and relegates carbohydrates and animal proteins to the side.



Nutrition
Today, modern nutritionists who read up on new research and study updates on nutrition clearly, unequivocally tell us: eat more but eat “well”. Eating well means eating better: fewer carbohydrates, not just complex carbohydrates, and less animal protein. Eating better means increasing the amount of good fats, like olive oil and nuts, and vegetables on your plate.

Stop counting calories
This is the best part! It was about time we took a step back. The most modern, science-based nutritionists are finally saying that calorie counting is a waste of time. Calorie counting is abstract, time consuming and pointless. We know this because dieticians have been saying for years that the calories in an ice cream aren’t the same as the calories in a dish of radishes and lettuce. Today we can eat more AS LONG AS we are eating better! (Not that this is anything new, but it seems like it’s not true until a doctor says so.)

Eating better and eating more to lose weight
That’s right. Walter Longo, in his book about eating the right foods to live longer explains it clearly: to get back in shape, you don’t need to starve yourself, you need to eat more of the right things. How? Pile your plate with more vegetables, more nuts and dress your food healthfully.


Turning the tables
I have been following this simple advice for years and when I share it with my clients, they are sometimes dumbstruck. Is it that crazy and strange? Actually, nothing could be more natural and your body immediately responds well. What this tactic basically comes down to is switching proportions. We may have been taught that salad or grilled vegetables are the side dish, but is that really the way it has to be?

Make your sides your new main dish
Like pink (or orange or any other color) is the new black, sides are the new main dishes. HOW? Here are a few examples:

  • Think of a plate with sautéed vegetables in its center and a nice, healthy splash of EVO (extra virgin olive oil) on top. Then imagine a piece of cheese on the side and a slice of bread baked with spelt flour (or rye or a combination of flours or whole wheat…or even plain white bread, but just one slice!)

  • Think of a bowl of broth with chopped vegetables (onion, zucchini, Brussels sprouts, tomatoes, etc.) and fewer than ten tortellini

  • Think of a nice pan of chick peas sautéed with onion and cherry tomatoes to fill two plates for two people and two slices (one each) of whole wheat bread (or spelt, rye or even white bread)

  • And more… Chart sautéed with garlic and a cod fillet

  • Green beans steamed with a pinch of salt (or sautéed in butter to heat them up the next day) and a little rice

  • Vegetables and pasta (not pasta and vegetables!)

  • A piece of meat as big as the palm of your hand and plenty of vegetables

  • A salad with lettuce, cherry tomatoes, chives and three squares of Parmesan cheese…

The new side dish on the edge of your plate
The possibilities are endless, but the idea is SIMPLE. Eating right is one of the key steps to feeling good. Eating healthy is a part of eating right. From now on, let’s turn the tables and use this mathematical formula: VEGETABLES + the “new side dish” (consisting of carbohydrate, protein – from plants, fish or meat – or cheese).

A simple trick to help you remember this mathematical formula is to use plates (at least at the beginning if you need to) with a flat edge. Put your vegetables in the middle, and put your “new side dish” on the edge.
